I have always wanted to write a book, however, coming up with a good plot always put me off, then, when I was diagnosed with coeliac disease, I found that I could no longer eat the foods that I once enjoyed: cakes, tarts, pastries and my favourite, pizza. So, I decided to experiment with various flours and other ingredients, always trying to recreate the cakes that I liked and enjoyed eating before, but were gluten free. After many disasters and wasted ingredients, I eventually started to have some successes, so I gave what I had baked to my neighbours to try and awaited their critique. Their response was positive and said that they couldn't tell the difference from ordinary baked cakes. It wasn't long after that when I decided to write down my experimental recipes to keep for future use, I then had the idea to try and write a gluten free recipe book so other coeliac and gluten intolerant people could once again enjoy eating baked goods like me and everyone else.
